Culinary Arts from Cattaraugus Allegany BOCES - Practical Nursing Program is a Campus Certificate Food degree that prepares you for a Vocational Programs career. From the preparation of American to Vietnamese cuisine, to baking, table serving and restaurant management, Culinary Arts has it all! Students will be actively involved in many areas of the restaurant industry in our own state-of-the-art commercial kitchens/working restaurants. These will include: Plating, portioning and garnishing a variety of foods, as well as meat preparation and standard restaurant-style entree preparation. Daily student head chefs will inspect food areas for safety and sanitation. Students will have hands-on access from planning, ordering and preparation to quality controls, service and everything in between. Students will also glean hands-on experience preparing and serving high-quality lunches/dinners to faculty, students, and the community in our own facilities, as well as through banquets and catering.
